Building a commercial kitchen, having trouble finding what standard grease trap regulations are. I'm in Victoria, but it seems to change by state?

Any ideas?

No plumber friends there.

Ask the local code authorities?

Hey mate, do you know much grease you'll be producing?

This is the standard commercial kitchen grease trap parameters.

As you're in Vic, I recommend checking out this. There's a calculator here that can help you make sure you have the right size to be up to code. It all depends on the volume from what I understand.
