Downtown merchants are requesting to have a cook-off competition during a local arts festival. Entries will provide their own propane grill and prepare food for judging. The public will be allowed to watch the food preparation. What special codes needs to be addressed for this type of activity. I find nothing under IFC 308 that would restrict this and no requirement for portable fire extinguishers on tab. 906.1 (2006 Edition). I am sure local government will have some input since this is in the right-of-way but my concern is code issues. Any comments or past experience I need to be aware of. Thank you

normaly require a good size fire extinguisher for each cooking booth, if deep fat frying require a lid that will fit over the cooking area, keep appliances back from where the general public can reach them, do not allow bbq's under canopy, keep propane cylinders secured, and try to limit the amount.

do a daily check of propane connections

some health departments want a canopy over all cooking and food prep areas.

You might look through chapter 24 IFC, not for canopies, but for a little guidance.
