Has anyone seen a wall construction that is UL listed, wood framed, 1 hour, and can be constructed from one side. Say either for a shaft wall, or up against an existing structure where you cant physically get the sheetrock installed on the back side?

Similar to a typical shaft wall with metal studs, but utilizing only wood? without the added metal framing?

No, and I don't think you'll find one. What you'll need to do is frame the wall and attach the gypsum board before the wall is raised into place and anchored.

Add the fire rating to the wall then lift the wall into place

Maybe what Mark said, but kind of you have the wall, than build a one hour wall against it.
