Is Section 507 "Unlimited Area Buildings" to be used only for occupancies listed as "UL" in table 506.2 or is this separate and apart from the tables ?

Did you look at 506.1.1

506.2 would not come into play unless stated in 507

No. See Sections 507.3 through 507.13 that provide the specific applications of unlimited area buildings. 507.3-507.13 are alternatives to Table 506.2, you can follow Table 506.2, or one of the options (if you qualify) provided in Section 507.
