Good Morning America had cooking tips for the holiday this morning. They demonstrated, live, an oil fire and described and demonstrated how to extinguish it. (with the top of the pan) Only problem was it lit back up as the reporter moved away from the stove. I thought they were going to get the cabinets going.

I'm trying to look for the video, they haven't posted it on the site and was looking online, but my employer prohibits you tube.
