Does the water that is used to cool an ice cream machine have to be connected to the sewer system or would it be considered NOT deleterious since it only goes through pipes then back out when it gets to temperature?

Water gets fed into lines that are used for cooling. When the water temp gets too high, it gets discharged out.
Where does it have to be discharged to?
