Cooking show 100 different vendors?

Just had a call asking what requirements have to be met to be able to have an indoor cooking vendor show. There will be 100 to 150 participants using propane and electrical appliances.

Any suggestions on what to watch out for and require?

Propane bottle size limits?

type of fire extinquisher and size?

Spacing between cooking areas?

These are a few things I thought of.

We will require an operational permit for the event if it realy happens just looking for advice.

I will be talking to the promotor tommorow and get more info then.
 
That's a lot of propane burning.....ventilation...carbon monoxide buildup...expiration dates on propane bottles...rotten hoses...but when I look at what I wrote, it all sounds like fire dept. stuff so maybe not.

Myself, I would look at it like a carnival and this is the food court. Power cords to trip hazards. You could throw them for a loop and hint that all of the receptacles must be GFCI.

What kind of place will it be in?? Hotel, convention center, barn,??

Would not allow any propane bottles in the building except the little stove top

If you allow deep fat fryers , cover that will cover entire cooking area to extinguish a fire

Every cooking booth must have own fire extinguisher. Abc

Does the "proposed" venue have adequate access for emergency response

vehicles, ...fire lanes, ...access to FDC's / fire hydrants, ...adequate MOE

I have been playing phone tag with the promoter all morning. So I don't know the details yet

The venue will be in a county fairgrounds metal building. Fire lanes, access and hydrants are all adequate, There are 2 buildings available, 1 sprinklered, 1 no sprinklers, Plenty of exits in each building. The sprinklered building also has a couple of large exhaust fans that may help with carbon monoxide if it is an issue.

The fire departments prevention division was eliminated about 3 years ago and the building department does annual fire prevention inspections and we assist the FD on special events like this. We do the research and tell him what is required. He wears the uniform and badge so he gets the respect. It is a realy good working relationship between the departments.
 
It is a 1st time event here. It will be 3 days of local resturaunts cooking and serving various menu items.

Spoke with the promoter. it will be in Feburary, in the sprinklered building, He has done these events in other areas, Has installed temporary hoods with suppression systems, brought in additional power for electrical appliances and run temporary propane lines (leaving the tanks outside) when required at other events. Looks like he needs to know the requirements and then see if it will pencil out.

Since it is first time a little easier to ask for stuff

If propane lines are allowed by you, need to require them installed by someone that does it for a living, with inspection by you

I carry 40 caliber soap squirt bottle to test any connections/ unions.
