Ducted ductless hood???

Stopped by a commercial kitchen and bar I did about 2 years ago today to give an estimate. The following pic is of a ductless hood system we installed after CO. Permitted and inspected at the time of install. Today I noticed some scabbed in looking ducting coming out of the top, my guess is to defeat the 3rd layer charcoal filtering shut down. These filters cost $130 each, last them a month and are non-washable, replace only items. Hack work at best IMO.

No inspection tag on the extinguishing system??
 
A handyman duct...no shaft...no wrap...probably can't be cleaned...I looks like shelves to hold grease... That really needs to be stopped...well unless the food is particularly lousy...in that case it might be better to let this play out...what am I saying...fire is never a good outcome...I mean how bad could the food be.

Obviously voids the UL Listing.

Similar ductless hoods I have seen had vane switches or micro switches to shut off the fryer if filters have been removed.
