High School Food Lab

I remember when it used to be called "Home Economics", but I guess that's not PC anymore...

How do you classify and treat these classrooms/labs that have multiple food preparation stations (kitchens) with residential appliances? Cooking and preparation goes on all day as they teach various food-related classes.

Hoods? Grease Interceptors? Is it a commercial kitchen? (It's not residential!)

Let me know how you approach it. Thanks.
 
Classroom

No fancy hood required,unless this is a restaurant program

A few added fire extinguishers

Gas or electric??
 
We treat them as a classroom and require (1) Type K for every 2 stovetops and since it will work on Class A fuels also this is all they need around the stoves. They must still maintain the complement of B.C rated extinguishers within the travel distances of NFPA 10 also. They call them "Life Skills" now in our region.
 
I do have a definition the "Political correctness doctrine" If anyone wants a copy let me know by email. Since it is political and has one kind of bad word in it you may not let me post it here.
