hoods over pizza ovens

Is a type 1 or 2 hood required for pre cooked meat on a conveyor pizza oven?

Can we assume that you are referring to the large type of pizza ovens used in

the 'Sloppa Johns', ...'Little Greasers' and 'Pizza B_tt' type of chain

restaurants vs. a counter-top type of conveyor pizza oven? Around these

parts, some of the convenience stores and smaller sized food serving businesses

will utilize the counter-top type of conveyor style oven to heat the pre-cooked

...pre-flavored, ...pre-colored, ...pre-packaged, ...pre-sliced, ...pre-pared,

...pre-formed food products and then sell them. They would not require any

type of exhaust hood.

FWIW, the counter-top types of ovens are quite the profit maker around

here. ;)

Yup it's a 'Little Greasers' and you put so eloquently and expressively north star.

1. Not allowed to by the "powers-that-be". Too much of a cost burden

to the business owners to do it by code. 2. The smaller sized counter-top

units typically do not produce enough grease or smoke to warrant a full sized

Type 1 hood system. The building / space HVAC system can usually handle

the minute amounts of any exhausts and filter them out in the circulation

process.
