Type 1 hood w/duct Thermostat

I have been asked to supply a Type I Exhaust Hood to a church.

Can anyone tell me the reasoning for the exhaust duct temperature probe? And what is the purpose of the temp probe? Is the exhaust fan supposed to operate if the temp probe detects a certain temp? Is the temp probe to start the fan? Is there an electrical connection so the appliances only operate if the temp probe detects too high a duct temp? If there is a mechanical automatic gas valve, how can the temp probe shut off the gas?

And the big question, is this temp probe supposed to increase the safety of the restaurant?
 
We see the temp probe in this location as part of the auto-on feature required for a type I hood. If an appliance turns on and heats the exhaust duct, the hood will turn on.

Looks like you have quite a few questions on this install - I would suggest you grab your code book and have a sit down with both the RDP and AHJ!
