IBC 2012 section 1210 does not address ceilings in bathrooms. I have showers and I have looked at the Armstrong wet room ceiling tiles for ACT, but I am not sure if you can use an ACT Ceiling at all. Also, can you use standard gyp. board around sinks and toilets?

Yes, standard gyp bd. can be used around sinks and toilets but no alone, it must be covered with an "impervious surface" such as tile or FRP liners.
 
Standard gypsum board cannot be used as a base for tile around water closets in public toilets. Water-resistant gypsum backing board per ASTM C 1396 is required per IBC Section 2509.2.

Regarding the use of typical gyp. board around sinks, toilets & urinals,

urethane type paint, or even a marine grade coating.

My title has been "project captain" for a while but now I'm freelancing architectural drafting/design.

I used to work for the same firm as Mark Handler, although don't think he knows me, typically been with production teams, residential and some commercial as well.

Spectratile is 100% waterproof and is used in shower and restrooms. ASTM E84. Could this be allowed in your application?
