Pizza oven in existing building

I am installing a pizza oven (self contained, UL listed) into an existing first floor bar (A-2 occupancy) and am trying to determine if this will trigger the requirements of a Level 2 alteration per the 2015 IEBC. Based on my initial reading, it seems like it will but i wanted to get others' opinions. My concern is what this will trigger for the rest of the building. The building is type V-B, unsprinklered, work area is less than 50%. There is a second floor B occupancy and a basement that is associated with the restaurant. All occupancies are currently unseparated. The second floor exit access stairway is enclosed by non-rated construction from the first floor, there are no openings (aside from all of the gaps in the existing construction). The basement stairway is open to the first floor.

My main concern is that it seems like per IEBC 803.2.1 a 30-minute enclosure will be required around the stairs from the second floor and basement. This is going to be extremely difficult considering the existing configuration and construction.

Another point I am trying to figure out is if a rated shaft is required for the grease duct from the pizza oven through the second floor and roof.

IMC 2015 Section 506.3.11 reads "Duct enclosures shall have a fire resistance rating of not less than that of the assembly penetrated and not less than 1-hour." The Exception to this reads that "a duct enclosure is not required for a grease duct that penetrates only a non-fire-resistance-rated roof/ceiling assembly"

The existing second floor and roof that we are penetrating are not rated. Nothing in the IEBC seems to require that they be rated. So by this it would seem that we don't need a rated shaft. Do folks concur? The duct that I am specifying is UL listed, clearance to combustibles will be maintained.

So what is the fuel for the pizza oven?

Some will say you are required a vent a hood.

Suggest contact the ahj and see what they require, direct vent or vent a hood
 
Personally the mechanical code is all that should apply not the IEBC

Level 1 Mechanical is not referenced in the other levels

Chapter 7 Alterations—Level 1. This chapter provides the technical requirements for those existing buildings that undergo Level 1 alterations as described in Section 503, which includes replacement or covering of existing materials, elements, equipment or fixtures using new materials for the same purpose. This chapter, similar to other chapters of this code, covers all building-related subjects, such as structural, mechanical, plumbing, electrical and accessibility as well as the fire and life safety issues when the alterations are classified as Level 1. The purpose of this chapter is to provide detailed requirements and provisions to identify the required improvements in the existing building elements, building spaces and building structural system. This chapter is distinguished from Chapters 8 and 9 by only involving replacement of building components with new components. In contrast, Level 2 alterations involve more space reconfiguration and Level 3 alterations involve more extensive space reconfiguration, exceeding 50 percent of the building area.
 
Are there products of combustion associated with the pizza oven (as in gas fired) or is it merely a warming oven (electric/microwave)?
Doesn't basement have sprinklers?

Oven is wood fired.
No sprinklers at all.
Building is a little more than 100 years old.
 
wrong answers! wood fired ='s products of combustion = need for a hood, a smoke shifter and most likely fire sprinklers.
What is building made of: Bricks, stones, logs, adobe, historic?
I take it the proposed oven is an indoor oven?
Has he reviewed this with his landlord, insurance carrier?
Your initial assumption is the correct one.
