We used to go to a Trader Vics on our aniversary, I always ordered the Oysters Flambé where the waiter comes to the table with flaming oysters, one year when we came in it was off the menu, I asked why and was told the fire marshal made them take it off for fear of setting off the fire sprinklers.

Ar any flambé dishes even allowed anymore or do we have to go to France to enjoy one?

it may depend on the area you live in but at least around here there are places that do it. Especially for some dessert dishes it makes a big difference especially when it's done during a nice presentation.

It can still be done, but has to follow the guidelines of the IFC in our area --- surprisingly, most restaurants around here meet the fire code requirements for cooking, just fail to do the other stuff...IFC 309.1.8
